Invite summer on to your plate with fresh baby greens, sweet oranges and crunchy walnuts

For the salad
3 cups mix of baby greens/fresh baby spinach/butter lettuce/rucola, 2 oranges, segmented, deseeded and peeled½ cup parmesan, sliced ½ cup chopped walnuts
For the dressing
2 tbsp olive oil, extra-virgin2 tbsp balsamic vinegar1 tsp Dijon mustard1 tsp pure maple syrup (or honey), optional¼ tsp table salt¼ tsp black pepper, freshly ground
1. To make the dressing: In a small bowl whisk oil, vinegar, mustard, maple syrup, salt, and pepper until well combined.
2. In a large bowl place greens, orange segments, cheese, and nuts. Pour as much dressing as you want over salad mixture and toss to combine. Serve immediately.
