Perfectly spiced mulled wine for the holidays
750 ml red wine
1 cinnamon stick, large
2 star anise
2 strips lemon zest, pared
4 tbsp caster sugar 100 ml sloe wine, optional
Put the red wine, cinnamon, star anise, cloves, lemon zest and sugar in a large pan
Cook on a low heat for 10 minutes
Remove from the heat and cool, leaving to infuse for about 30 minutes
To serve, heat without boiling, stir in the sloe gin (if using) and pour into mugs or heatproof glasses
What is mulled wine?
It is normally a red wine, infused with spices and fruits, served during the cold winter months. Spices used could include nutmeg, star anise, cinnamon, clove, all spice and vanilla. Bitter orange is commonly used, also fruits like apples, figs, ginger and raisins. Alcohol like rum, brandy, sherry or cognac can be added. Non alcoholic mulled wine is called Wassail. Very popular in European countries, it has many health benefits and is a warm and comforting drink.
